1. Carrageenan, also known as Irish moss gum, is the calcium, potassium, sodium and ammonium salts of polysaccharide sulfates composed of galactose and dehydrated galactose. Due to the different binding forms of sulfates, they can be divided into Kappa( k type), Iota ( i type), and Lambda ( L type), each kind of carrageenan has different charactor. For example, Kappa has a very strong bind with potassium ion, the gel of Kappa carrageenan has good stength, but the water retention capacity is not good enough. Iota carrageenan needs to combine with calcium ion, gel becomes bouncy and elastic
2. Carrageenan is white or light brown granules or powder, odorless or slightly odorous, and has a sticky and slippery taste. Soluble in water at about 80°C to form a viscous, transparent or slightly milky white free-flowing solution.
